Paddleford (Wild Saison – Mixed Fermentation Ale) 5.6% abv. Inspired by the rustic saisons of Belgium, Paddleford was brewed with a mix of barely, unmalted wheat, and locally grown and malted triticale. After three months of fermentation using a blend of Saccharomyces and Brettanomyces, Paddleford was then dry hopped with Hallertau Blanc and Huell Melon. This slightly funky, dry saison was then bottle conditioned to achieve the desired level of effervescence. Paddleford is named for the truss bridges developed in the 1800s by Peter Paddleford, a bridge builder from Littleton, N.H.
